Some sample ingredients and definitions are also included. To see the full press release, visit http://www.vrg.org/press/97juningred.htm.

The 28-page Vegetarian Journal's Guide to Food Ingredients can be ordered from the online VRG catalog at http://www.vrg.org/catalog/order.htm, or send $4 to VRG Guide to Food Ingredients, PO Box 1463, Baltimore, MD 21203.

RECIPE OF THE MONTH

11) 'Tis the season of tomatoes and corn! Here's a recipe from Simply Vegan which combines those two summer favorites.

CORN-STUFFED TOMATOES
(Serves 3)

6 large ripe tomatoes
1/4 cup water
1 cup frozen or fresh corn kernels
1/4 teaspoon cayenne pepper
1/2 cup pitted black olives, chopped
1/2 cup cornmeal
1/3 cup water
2 tablespoons molasses
1/2 teaspoon baking powder

Slice off tops of tomatoes and scoop out pulp and seeds. Saute corn, pepper, and olives in 1/4 cup water over medium heat for three minutes. Mix cornmeal, 1/3 cup water, molasses, and baking powder together. Fill tomatoes with corn mixture. Cover tops of tomatoes each with 1/6 of the cornmeal mixture. Broil tomatoes for 10 minutes until the cornmeal topping becomes the texture of bread. Serve hot.

Total calories per serving: 223; Total fat as % of daily value: 6%; Protein: 6 gm; Carbohydrates: 47 gm; Fat: 4 gm; Calcium: 82 mg; Iron: 3 mg; Sodium: 345 mg; Dietary Fiber: 8 gm.

If you're a purist and don't want to cook those tomatoes, try VRG volunteer Bobbi Pasternak's favorite summer sandwich. Toast two pieces of whole grain bread. Brush toast lightly with extra virgin olive oil, then rub liberally with a halved garlic clove. Fill your sandwich with fresh tomato slices. If you want, add a couple of leaves of fresh basil and/or salt and pepper to taste.
